This has been one of my all-time fave dishes, courtesy of my Mom Chicken Cacciatore is like an Italian chicken dish, that can be served with white rice or even egg noodles. I personally think it tastes best when you add a dry white wine to it, such as a Pinto Grigio or Sauvignon Blanc, but you don’t have to add it if you don’t want.
 Recipe type: Dinner Author: Military Wives Saving Prep time: 15 mins Cook time: 50 mins Total time: 1 hour 5 mins Serves: 4 A delicious Italian Chicken Dish, perfect when served over white rice and garlic bread - 4 boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 1/2 medium onion, sliced
- 1/2 cup of mushrooms (stems and pieces)
- 2 cloves garlic, chopped
- 1/2 cup dry white wine
- 2 cans stewed tomatoes
- 1/2 cup chicken broth
- 1/2 cup tomato sauce (or marinara)
- 1 teaspoon dried oregano
- 1 bay leaf
- 3 cups prepared white rice or egg noodles
- 1/2 cup shredded Parmesan Cheese
- 1/4 cup Fresh Parsley
- Garlic Bread
- Heat olive oil in a large pan over medium heat.
- Brown chicken on both sides for 5 minutes each on medium heat. Cover and set aside.
- With the pan drippings, add onion, mushrooms and garlic and cook for 2 minutes, then add wine and cook for 2 minutes on medium.
- Add stewed tomatoes, tomato sauce or marinara, chicken broth, oregano, and bay leaf.
- Add chicken to the mixture and cover – cook for 25 minutes on medium heat. Stir and cook
- Return chicken to pan, turn in sauce to coat. Cover and cook for 25 minutes. Uncover and cook another 25 minutes.
- Remove bay leaf , sprinkle parmesan cheese and parsley over top, and serve over rice or noodles with garlic bread.
